Grilled Chicken Taco Pizza On Naan Bread

Have you ever seen Naan bread in the grocery store, and wonder what to do with it? Or maybe you have never heard of Naan bread until now.  Naan bread is an Indian flat bread similar to pitta bread usually in the bakery section of your local grocery store.  You can get them in plain, garlic or whole grain.  I prefer whole grain.

This recipe is easy to do and you don't even need your oven.  All the cooking is done on the grill.  Makes 2 pizzas

You will need:

1 Package of Naan Bread.
1 Chicken Breast
Taco Seasoning
Sliced Olives
1 Can Refried Beans
2 cups grated Cheddar Cheese
Sour Cream

Preheat your grill

TIP: Place your chicken in a gallon Ziplock bag and then pound out chicken.  This will prevent splatters of chicken around your kitchen and clean up is easy.

TIP: If you pound out your chicken breast with the flat part of the meat tenderizer, your chicken will cook faster and more evenly on the grill.

Season the chicken breast with taco seasoning on both sides.

Place on grill and cook until done.

While chicken is cooking, grate cheese, and warm up the refried beans.

Split refried beans in 1/2 and spread on Naan breads.

When chicken is done, let rest for a few minutes.

Cut chicken in small chunks and place on Naan breads.

Sprinkle with cheese and olives.

Place pizza on the grill and let cook until Naan bread is a little crispy and cheese has melted.

TIP: Place sour cream in a ziplock sandwich bag.  Squeeze sour cream into corner.  Cut tip off and you have a inexpensive pastry bag for your sour cream.

Squeeze sour cream over grilled pizza.

There you have it, a Healthy Taco Pizza cooked right on your grill.

Enjoy!
