Fourth of July Cupcakes Using Coconut Oil Part 1

Can you believe it's almost the 4th of July?  I decided I better start thinking about making some treats for the parties on the 4th.   I wanted to create some cupcakes using coconut oil in place of the vegetable oil.   You can't even tell these were made with coconut oil.  I also had some fun layering the cupcakes in red, white and blue.

All you do to create these cute cupcakes is make a cake mix. Instead of using the vegetable oil you use the same amount of coconut oil.  Seperate the cake mix into 3 bowls.  Add your food coloring or food gel.  I found the gel works better.  Food coloring seeps into the other colors during baking and you wouldn't have your red, white and blue layered look.
Start by adding one color to each baking liner.  Then you will go to the next color and so on. You will only add 1-2 Tbsp of each color.  Bake.  Cool completely.  Now it's time to frost them.   


Buttercream Frosting 
1 cup butter softened
3 cups powdered sugar
3 tablespoons vanilla extract

Mix all ingredients together until combined.  Divide frosting into 3 bowls and add red, and blue food gel to frosting.  Frost cupcakes. What you are left with are some adorable cupcakes perfect for any 4th of July party.  Stay tuned tomorrow and I will show you my cupcake wrappers and toppers for these festive cupcakes.
